Brussels sprouts are consistently listed as one of the healthiest foods you can eat. They are low in calories, high in fiber with lots of Vitamin C and K. But I have to admit, I have never liked Brussels sprouts, and to this day they are still not my favorite. However, when my husband put these grilled Brussels sprouts with olive oil and spices on the table I had to give them a try. Otherwise my daughter would have taunted me with "Sam I am." So I popped a couple in my mouth and was pleasantly surprised.
You can use this recipe and then drizzle some balsamic vineagrette on top for a little added flavor. My husband also grilled the Brussels sprouts with cherry tomatoes and pearl onions. Yum.
1 pound Brussels sprouts
2 gloves of garlic minced
Pinch of dry mustard
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Sprinkle with olive oil
Trim the stems and yellow leaves off the sprouts. Microwave them in microwave-safe dish for approximately 3 minutes to soften them a little. Mix ingredient in bowl with the brussel sprouts. When the sprouts have cooled and you can handle them, skewer brussels sprouts onto a metal skewer. Place the skewers onto the grill with stem end closest to the flame. Cover and cook for 5 minutes. Turn the skewers over and continue to cook for another 5 minutes. Remove the sprouts from the skewers and serve as is or for more flavor add balsamic vineagrette before serving.
