Chicken and rice bake

​​Ingredients

  • 4 chicken breasts
  • 2 cups uncooked long-grain rice (organic if possible)
  • 3 cups chicken stock
  • 1 cup water
  • 1 lemon
  • 1 bunch of your favorite fresh herbs
  • Salt and pepper to taste

Directions

Preheat oven to 350 degrees. Put rice, chicken stock and water in a steep-sided baking pan and season with salt and pepper. Top with chicken breasts, juice of one lemon, fresh herbs and salt and pepper. Bake for 1 hour, or until rice and chicken are fully cooked.
